If you’re going to judge the project, I think looking at several months of data will give you a much clearer picture. Your plan seems to account for that, which is a good thing.

The organic traffic part is what makes these projects difficult. Getting the content online is easy nowadays, but finding keywords you can realistically rank for is a completely different story. Hopefully you share some of your keyword research as well.
